Skinny tomato soup

As I lumber my large and ungainly way into January and prepare to go back to work, I make a start on the diet. My cunning plan to emerge as slender as a supermodel is based around eating tasty but sensibly low calories breakfasts and lunches and then having something truly delicious, yet very low calorie for supper.

Lunch.. that is the problem. I want something really tasty to keep me going. I drink black coffee all day and I need a different taste.

Now. It is Sunday night and I haven’t really thought it through, so I start rummaging in the cupboards. There aren’t any tins of tomatoes…. I can’t believe it, because I always buy plenty. There’s lots and lots of stuff in there to make delicious meals but I am trying to cut calorie corners.

What I do find is a carton of V8 vegetable juice … look at the goodness in that…

and an  onion.. and a packet of bonito stock, or dashi.

This is a combination of fish flakes (a bonito is related to the mackerel and tuna, dried and shaved into flakes)  and seaweed… it may sound strange but it is going along the umami route – a deep, flavoursome stock that gives you “mouth feel” as if what you are eating is rich and certainly more calorific than it seems. It doesn’t taste fishy… just savoury.

Don’t add it if you don’t want to, or if you can’t find it – add ordinary vegetable stock or miso instead. The aim is to make what would otherwise be a thin soup (with, therefore, very few calories in it) into something that tastes if it has more body and richness to it.

So, one onion, chopped (about 100 calories, raw) and one tablespoon of oil  (about 120 calories) – see how much work I do for you? Calculating all this?

Sweat the onions till soft with a pinch of salt (that makes them stay soft and translucent)

Add a sachet of bonito stock and stir round.

Pour in the V8 (190 calories for the litre)  … how healthy is this going to be? All those vegetables in there…stir it round and let the onions finish cooking.

Now, if you have fresh coriander chop it and stir it round.. or, if you have a tube of it (always handy to have some in the fridge) give a quick squirt

Remember those chillies I made chilli oil with? I got one of those out and added it

And a squirt of ginger as a livener…

And whizz it all to a silky smoothness

Now, by my reckoning that comes to maybe 500 calories or so for the litre…. that’s a LITRE.. That’s a panful.  A good sized mug full will only be 100 -125 calories.

There’s a richness and fullness to it that makes it so very satisfying. It’s tomatoey (as it should be) and savoury – not just salty… and there’s a hint of a nip of ginger and chilli.

It’s not just one dimensional.

Flashforward to Monday lunch….

It’s a winner. Can this be the way forward?

Boxing Day Breakfast Bonanza

Boxing  Day is so much more relaxed than Christmas Day, because there’s time for idling about. I can’t be bothered, nor can I afford, to go shopping in the sales, so Boxing Day to us means a slow start.

And with a slow start comes a desire for a proper breakfast. None of this leaping up before 6 am and having a fruit smoothie in a rush to get ready for work. Today involves a gentle amble round the kitchen, looking out of the windows at the snow piled up outside, while drinking a coffee.

A slow start means you are more than ready for a more substantial breakfast… smoothies are fine, delicious even, but somehow on days like this your mind wanders towards some sort of fry up.

As it is Boxing Day there are leftovers from Christmas Day… sprouts, carrots, roast potatoes… and a couple of pigs in blankets.

There are even some carrot and parsnip parcels wrapped in Parma Ham

All of  that would fry up nicely. Not exactly bubble and squeak but as near as possible….

So start chopping those vegetables

You want lots of edges so they can brown and crisp in a big frying pan with a spoonful of oil

Give it all a good stir round

Now those browned bits are slightly carmelised… there’s a sweetness and a hint of charring.  And who on earth would not like fried potatoes?

What other day of the year would you look at a cold Brussels sprout and say to yourself that it would be all the better for frying up for breakfast?  All you need for breakfast perfection is a fried egg

Fantastic Focaccia

The weather over the past week had made us wonder if we could get home for Christmas. There were all these weather warnings telling us not to travel unless it was absolutely essential.

Essential? This is Christmas. Of course it is essential.

When I got up on Christmas Eve morning and looked out of the bedroom window there was thick, freezing fog and snow

We should be able to manage, we thought….. and after packing the car to the roof with food and general essentials (we were going back to my empty house… with its empty kitchen) we set off.

Christmas traffic wasn’t as bad as the motoring organisations and the police made out.

It was snowy and foggy but everyone else seemed to have paid attention to the warnings and stayed at home. It was probably the fastest time we had ever made it north

You really know you are getting somewhere when you see signs for Scotch Corner.

For a Northerner living in the Midlands (which seems like the Deep South to me) getting to Scotch Corner is the first part of the true north. It always makes me smile because I know I am nearly home.

We arrived back in the village to an empty kitchen… luckily I had packed boxes of food and essential ingredients.

I’d brought olive oil, garlic, eggs, flour, yeast, white truffle balsamic glaze, potatoes, carrots, broccoli, salt, tea bags, coffee, tinned tomatoes, chickpeas and chorizo.

A pork pie made by our butcher, some bacon, cream (single and double), butter, champagne, white, red and rose wine.

Vegetable juice, pomegranate juice, fig molasses, Marmite, Parma ham, leeks, cheeses and pickles. All essentials, as you can see.

I could make anything…. anything but a cup of tea. I’d forgotten  to bring the milk,  so I had to drive to the next village to buy some so we could make a cup of tea. And there was me thinking I had all the essentials covered…….

Thing is, I hadn’t really thought of what we would eat that night. I know we had some left over cold sausages that I had put in a plastic box but we really needed something more than that.

I decided that if I made some foccacia that would help the situation…..

Usual thing… 300g of strong bread flour

7 g of instant yeast, (that’s a teaspoon and a half, I suppose, if you aren’t using the sachets)

Maldon salt

150 ml of warm water

2 tablespoons of olive oil.

Now, I was in a kitchen that I had more or less stripped of equipment, so instead of leaving it to the Kitchen Aid to mix for me, I had to do it myself

Just goes to show how easy it is to make this. One large bowl, a wooden spoon and off you go.

It comes together quickly enough.

A quick squirt of garlic puree wouldn’t go amiss

And then knead it…. dust a board with flour and stretch it, pull it, roll it and fold it.

You will feel it changing in texture… there’s sort of lumps and bumps in the dough at first and then it becomes smoother and silkier.

It’s still not perfect though and you have to let it relax. Only then do you get really good smooth dough.

At this point you have to let it rest and rise. You need to stop it drying out so either cover it in cling film or, do as I do, and put the bowl over it. That keeps the dough moist and stops it forming a crusty outside which is certainly something you don’t want while it is loitering about

It will take maybe half an hour or so

You can feel the difference as well as see it… it is resilient and springy… the lumps have disappeared and it is smooth and silky to touch.

Wipe down the bench and spread some oil on it and then put the dough down.. stretching it into shape with your fingers if you haven’t a rolling pin at hand.

You can see how wonderfully puffy it is becoming.

Heat the oven to 200 degrees C.

It needs to have fingers poked into it to get the dimpled foccacia look and some oil drizzled over it.

And this is when I had the idea…. add bacon!

I snipped two rashers of bacon and scattered the bits over the dough.

Now that is a way to stretch your ingredients. A bacon sandwich would have used those two rashers for one sandwich. This makes it stretch over a lovely big bit of bread….

Then just put the whole thing onto a baking sheet – the oil in the dough will prevent it sticking, so don’t worry if you don’t have one of the incredibly useful silicone sheets

Stretch it out to fit and then just put it in the oven for 15 minutes or so…See? Minimal ingredients, minimal work and the shortest time in the oven.

Waiting those 15 minutes gave me enough time to have a quick wipe down of the benches and open a bottle of wine and pour us both a glass

We sat there, eating garlicky bacon scattered bread, fresh from the oven and sipping a glass of wine.

It was Christmas Eve, the snow was whirling round outside and we had driven hundreds of miles to get back home. We sat on either side of the kitchen table and toasted each other.

Puy lentils and peas

One of the most delicious vegetable  dishes the Bear and I have is made from what might seem to be an unlikely combination of lentils, peas and onion…. it’s quick and easy as well as low calorie. What more could you want?

Puy lentils are a beautiful browny-green colour and they have a lovely nutty flavour

They just need a quick rinse and then put them in a pan with twice the amount of water and bring gently to the boil.

I sometimes add stock granules to the water and that adds another dimension of flavour to the lentils.

While they are gently boiling, finely slice a red onion

and put the slices in a bowl with some olive oil… maybe three or four tablespoons

This starts to soften and mellow the onion.

Then squeeze half a lemon

Pour the lemon juice in and stir round

Add a few handfuls of frozen peas and no, you don’t need to defrost them.  They start to defrost gently and not boiling them keeps them full of flavour. That lemon juice and olive oil dressing seems to emphasise the sweetness of the peas.

By now the lentils will be cooked – they keep their firmness to some degree but they shouldn’t be hard.

Drain them quickly… and then…while they are still hot add them to the bowl

Stir them through the mixed peas and onion, making sure they are all covered with the lemony dressing.

The heat of the lentils softens the onion to perfection and takes the last chill off the peas.

This really is an excellent side dish to serve with roast meat… one of our favourites is roast lamb. The lentils and peas are all you need to serve with a few slices of meat – we don’t even bother with potatoes – which means it makes one of the simplest suppers ever

Macaroni Cheese

Well… it’s cold outside…. I wake up and go to make coffee

… it’s been snowing… and more snow is forecast. If this is the morning

What will the evening be like? I want to be snowed in.

I know I have enough food for an army and I can think of nothing better than being made to stay in. It wouldn’t be my fault, would it? Just imagine the bliss…. not going to work, just tucked up, nice and warm, looking down on the city below us. 

We have an enormous sofa and it would be so lovely to be sitting, curled up with the Bear, both of us clutching a lovely bowl of…. what?

I want something savoury and soothing… soft and warming….. comfort food at its finest. And then I thought of macaroni cheese. That would be perfect – pasta, all soft and oozing cheese sauce, the top crisped and brown… I dare say an Italian would look on this with horror but it is truly an English dish now.

“…we can establish the venerableness of the dish we call macaroni cheese from the following recipe which must have been introduced from Italy… into the court cookery of Richard II [1367-1400]. Macrows. Take and make a thin foil of dough, and carve it in pieces, and cast them on boiling water, and seeth it well. Take cheese, and grate it, and butter, cast beneath, and above as for losenges, and serve it forth.’ It was apparently not made in England during the next few hundred years, but it returned from Italy in the eighteenth century…when Elizabeth Raffald published a very good recipe entitled “To dress macaroni with Parmesan cheese.”

So, macaroni… lots of it

Into a pan of boiling salted water to bubble away until it is cooked. Now real Italian pasta meals are served al dente but this is macaroni cheese.. it is going to be baked after this… it is going to be soft and gorgeous.

While that is cooking, get started on the cheese sauce… you need good butter, some cream

some onion and some cheese. I had a big slab of Farmhouse Cheddar just  asking to be used

Now, I always add onion. I like the contrast between the slight roughness of the pasta and the smoothness of the onion. It lightens it up just a fraction.

First thing is to chop the onion and gently saute it in butter until it is translucent

When the macaroni is cooked, drain it and put it into a lightly buttered dish with a knob of butter to melt over it

and then stir in those soft onions

Now back to the sauce – melt two tablespoons of butter and stir in two tablespoons of flour.  Season it well with Maldon salt and fresh ground white pepper.

You need to cook the flour properly so stir it round until it all comes together then start stirring in a mixture of milk and cream

It becomes a smooth and silky, glossy looking sauce.. which is when you add the cheese

If you have some parmesan or Gran Padano then add that, too… it adds an extra hint of cheesy sharpness

Stir it all round till the sauce becomes smooth again and then… well, then  you pour it over that glistening bowl of macaroni and stir it round so all the cheese sauce can seep into the macaoni, filling the little tubes…

An extra grating of the two cheeses on the top makes a lovely, golden bubbling crust

All that needs now is maybe 30 minutes or so in the oven at 175 degrees until the top is browned and you can smell that it is ready.

In that time, plump up the cushions on the sofa, pour a couple of glasses of wine… look out of the window and be glad you are warm inside…..

Of course, a true romantic like myself likes to make sure the Bear feels loved. Well, with macaroni cheese, a tomato sauce heart, a glass of red wine and someone to cuddle with on the sofa, he definitely feels loved.

That was lovely…we were in our top floor apartment, with three walls of windows, watching  the snow whirling about all around outside,  while we were inside with the  best comfort food in the world.

What could be better than eating a bowl of that with the one you love?

So simple and so right for days like this.

Pork and Pepper Goulash

The Bear has returned from a trip to Australia and I have returned from work. We meet upstairs in the kitchen.

I need to cook something and I need to make sure it is not only quick to cook and serve   (before he falls asleep from jet lag) but also to get us back on our diet. It will have to be something from the 400 and Under section of my recipe files.

On my way back through town, in the rush hour traffic, I pulled in to the supermarket to see what there was and saw some pork.

I knew there was a recipe that I had cooked before that turned out to be surprisingly  tasty. I say surprisingly, because it wouldn’t have been my choice when I spotted it. I said, didn’t I, that I looked through magazines and cook books for recipes that gave us under 400 calories per serving?  Well, I always index tab them and show them to the Bear to see if there’s anything he fancies. He picked this one  from delicious.magazine (sept 2008). And this one had two things going against it in my eyes… it involved pork (not my favourite meat) and caraway seeds – very definitely not my favourite flavour.

Still, it was his choice and I am, despite appearances to the contrary, quite pleasant at times….

And as it happened, it turned out to be incredibly delicious. And also very quick to cook. Time to do it again, I thought.

So I got 4 boneless pork steaks – not too much fat on them – and not too expensive. I knew I had all the other ingredients that I would need, which is another good reason to read this recipe and keep it in mind.

I needed a tin of tomatoes, a red onion, some smoked sweet paprika, some caraway seeds, a jar of roasted red peppers in oil and some yoghurt.

First of all, while waiting for the kettle to boil so I could make the poor, exhausted Bear a cup of tea, I sliced the red onion and put the frying pan on to heat through.

Not much oil in the pan and get them softening, before adding 1 tablespoon of smoked sweet paprika

Stir it all round and while the flavours are blending, cut the pork into bite sized pieces. Take the rind and any excess fat off (we are on a diet, you know!) and add that

get that meat in and stir it round, letting it brown

I swear, all that took just a few minutes. All I had to do then, once the meat was browned, was to add a tin of chopped plum tomatoes and let it simmer for fifteen minutes.

Now, as I was in late from work and as the Bear was starving, I didn’t want to delay supper. I had some Anya potatoes (those knobbly ones) and I put them on to steam (yes, it really should have been mash but I knew this would work) All I would have to do with them would be to crush them so the gorgeous juices soaked in….

… and some of the juices would be coming from the roasted red peppers. Most of the supermarkets have them and they are a great storecupboard standby. They have a real depth of flavour and a long shelf life so they are perfect to get and keep for moments like this.

Cut them into pieces and then add them to the tomatoey pork after it has had fifteen minutes or so, cooking

… then add a couple of large spoonfuls of yoghurt.

And that’s it. Done and dusted in less than 40 minutes. Squash the potatoes with a fork so they are broken up and then spoon over the delicious (and I say this as a person who doesn’t LIKE caraway) meat and sauce.

The tomato and caraway make a beautiful rich and savoury sauce for the meat, which is still tender…..

A sprinkling of parsley sets it off… all that for less than 400 calories (396 according the the recipe) … maybe 550 if you add the potatoes?

Well… it WOULD have been 550 calories but it was so utterly delicious I did have an extra spoonful. I do my best, you know. It was quick and easy, low calorie…… but I am greedy.

It is supposed to feed 4 so if you are strict and divide it by 4………. or maybe invite two friends round? That should solve things. What can you do, eh? Totally delicious…….

Noodles and Prawns

As part of the Bear’s training process ( in order to be truly omnivorous, he must learn to eat everything… and that includes shellfish) I am trying out various prawn recipes on him. He used to  get a very stubborn look on his face when I suggested shellfish and shake his head fiercely but he is getting used to me insisting he tries a mouthful, at least. These tactics are beginning to pay off. 

He not only ate his salt and pepper prawns but actively enjoyed them and would have eaten more but for the fact I insisted I had my fair share. I moved onto the next step in my plan….

I knew he had liked the savouriness of the salt and pepper prawns and I wanted to give a hint of that when cooking this next lot. I decided that a marinade would boost things up, so I mixed a bowl, using Chinese cooking wine, some sweet soy sauce, some sweet chilli sauce and some sunflower oil. A squeeze of lemon would sharpen up what would be a sweetly savoury spicy marinade.

 In went the prawns and I got on with other stuff. I thought noodles and vegetables would be good to go with it

I had an orange pepper, some spring onions, a carrot, some garlic and ginger and some Chinese leaves. They would give a lovely crunch to the dish and be a good contrast to the softness of the noodles. I got some ready (because this is so quick to do, you need to have everything ready before you start cooking)

With some hot oil in my largest frying pan (I really should get a wok, you know, but our kitchen is tiny and there isn’t another square inch of space to put anything and the benches are full already)

I started by frying some garlic and ginger with a splash of sweet soy

and then started frying the pepper, carrot and spring onion

then the shredded bits of chinese leaves

Put the noodles in and stir fry quickly.

Next step….prawns. By now they will have been doused in the marinade

Squeeze a lime – roll it first to get the juice going .. you will need that to squeeze over the cooking prawns

 and then take out the noodles and vegetables – you are going to need that pan for the prawns

Pour in the marinade as well – there is oil in there… just look how quickly they go from grey to pink….

And serve. Some finely chopped spring onions scattered over the top just sets things off.

And was it eaten? Yes it was, by a person who says he hates shellfish. Well that’s two lots he has eaten now…. and it’s not as if he left any. Was it enjoyed? Draw your own conclusions.

Toffee vodka

I first made this years ago and it is rather like Marmite… not in taste, of course, that would be silly, but in causing complete polarity amongst my friends. They either hate it with a passion or they love it.

Toffee vodka – at least this rough and ready version of it – is the easiest thing in the world to make. Quick, too. Which is handy as I have a couple of friends coming to stay tomorrow night and it would be good to offer them at least a little drink….. These are the friends who once called me, whilst on a camping trip, for instructions on how to make it. J & M  called later to say they had been bashing the toffees with a tyre iron to get them to fit in the bottle neck.

That did cause a bit of a mess as they were bashing them on the dashboard. Shards of toffee were found for months afterwards.

Anyway, this is the quick and easy way to do it……

Get a bottle of vodka – it doesn’t have to be good vodka.. in fact, why would you use expensive stuff when you are going to add a packet of Werther’s Original Toffees?  Then, get a large jar

The first experiments involved taking some vodka out to free up some space and shoving the toffees down the neck of the bottle (hence the adventures with a tyre iron) but we realised that while that may be necessary when you are living rough (or camping, as they chose to call it) a large jar was much easier to deal with.

Step one…. unwrap the Werther’s (they really do taste the best)  and add them to the jar

Step two … add the vodka

Step three… watch how quickly it all dissolves – this is after ten minutes

Step four… give the jar an occasional shake… it will be dissolved completely within 3 or 4 hours. Shake or stir to help it along….

Step five…. decant it into pretty little bottles, wrap a ribbon round and give it as a Christmas present… OR… serve it in a glass with plenty of  ice and some single cream.

I’d like to think it was some sort of cocktail…..It probably is in some sort of chavvy way.

Oh and be warned. You really must dilute it .. While it tastes almost innocuous with its rich toffee flavour, it is, after all, the equivalent of drinking neat vodka while sucking a toffee.

The way to go is to add a mixer and what seems to work best is milk or cream. M and I like the cream option while J goes for soya milk. It transforms it into a soft and delicious drink. In fact, you could start off a party evening with  a round of this for everyone.

Drinking it neat is madness and may lead you to complete inebriation and a life on the streets.

And don’t sneer… some of us are very partial to it!

Lemon glazed cake

There’s something very nice about a plain cake to have with a cup of coffee or tea. A plain and simple cake with a single flavour… no huge amounts of whipped cream and jam… just something to have with a hot drink. Something to change a snatched drink and a quick pause from work into a relaxing break.

Easy enough to make, as well…. I had an old recipe that I thought I might do – hence the measurements being in ounces… I have converted them because I can’t, for the life of me, work out how to get my digital scales to switch from grams to ounces.

I thought a nice plain cake with perhaps a lemon glaze would be good…

 Start off by heating the oven to 180 degrees then mix

310g /11 oz caster sugar

56g/2 oz butter

3 egg yolks (you use the whites later)

Get everything mixed together

See, it is still grainy here… keep going until it is smooth.. then add  225g/8 oz of yoghurt –

Zest a lemon and add that to the mix

Stir it in gently – don’t overbeat things at this stage, then fold in 170g/6 oz self raising flour

Then whisk the egg whites

And carefully fold them into the cake mix… start with a spoonful first to get the mix broken up slightly and then add more

There you are, done.

All you have to do now is pour that into a cake tin – a springform is best as you can get the cake out easily afterwards, and popping in a paper cakeliner makes it the easiest job in the world.

Into the oven with it for maybe 35 minutes.

You can occupy yourself by making the lemon glaze….remember you zested a lemon for the cake mix? Squeeze it now

and add it to some icing sugar  in a pan and heat it through, making a lovely syrup

.. which needs to cool.

You can relax now until the cake is ready to come out… stick a skewer in to make sure it is cooked and then get it out to cool

Once everything has settled… stick holes in the cake and then pour over the syrup to make a lovely glaze

It is a really rather lovely cake, you know. Light and moist and beautifully tangy.. just the thing for a mid afternoon boost.

My boss, who doesn’t normally like cake, ate two slices and would perhaps have eaten more… but for the fact the whole thing had been polished off already. I suppose that is as good a rating as you will get for a cake.

Chicken Jalfrezi

We have decided on a new regime. We seem, somehow, to have become rounder.

Somewhat stout, actually. We are going to have to go on a diet. Only thing is, we aren’t very good at diets … well we aren’t very good at chewing on celery and raw carrots.

What we thought we could do is eat as if we weren’t on diets but make sure what we do eat is low calorie.

I started to go through magazines looking for recipes that came in at under 400 calories a serving. My thinking behind this was that if we ate sensibly at breakfast and lunch then we could look forward to something nice at supper.

But supper had to be low calorie….. I wanted proper food not some kind of packet.

You can buy packets of ready meals that have the calories counted for you but that wasn’t the way I was going to go.  If I could make sure that each serving was low calorie but still home made and tasty.. well that was the answer.

If it was only 400 calories a serving then that would mean there was still room to bring in a side dish… we could diet and feel as if we were still enjoying ourselves! All I had to do was find some recipes

One of the first recipes I found was Chicken Jalfrezi in Olive magazine, October 2008.

And it was only 250 calories per serving!

That had to be a winner. So, what did we need?

A large onion, sliced,

3 cloves of garlic

2-3 green chillies, sliced

Ginger grated

Chicken thighs – 6 cut into chunks

Tomatoes, 5, roughly chopped

Green pepper, chopped into pieces

Coriander – small bunch with the leaves picked off

Yoghurt – small pot

Spice mix

  • 1 tsp turmeric
  • 1½ tsp ground cumin
  • 1 tsp ground coriander
  • 1 cinnamon stick
  • 5 cloves , ground
  • Well, you can see in the picture that it is, first and foremost, rather dark. That’s because I was late in from work and despite all the lights being on, it still looks dark.

    You can also see a tin of tomatoes – I forgot to get fresh. Just as I forgot to get fresh garlic and ginger, hence the tubes of puree. Oh, and the pepper is not green but orange.

    Still… everything else is OK……

    First thing.. heat 2 tablespoons of  oil in a pan and add the onion and a good pinch of salt and fry until it is soft and golden, then add the chillies, garlic and ginger and cook for another couple of minutes

    Make the spice mix

    And add it.. I had also put in the stalks of the coriander (they can’t contain many calories, can they? And they do taste nice)

    Cook it all for a couple of minutes to round out the flavour..

    Add the chicken pieces

    And stir round

    Then add a splash of water, the tomatoes and the pepper

    You can now cover the pan and let it cook gently for 30 minutes or so.

    That gives you enough time to go and settle yourself for a while… it had been a long day for me and I was tired. Even so, that wasn’t a lot of work and was surprisingly quick to do….

    The sauce will have started to thicken up by now.. if not then take the lid off for the last ten minutes. If you are using the yoghurt, add it now and stir it in for a creamier sauce. I still had plenty left from the Total Great Greek Yoghurt Experiment, so this was an ideal dish to try it in.

    I made steamed basmati rice to go with it….and served it up.

    Even with the rice that had to be less than 500 calories.

    A bowl of ice cream is 500 calories.. and that’s a small bowl. I know what I prefer.

    The Chicken Jalfrezi  was quick and easy to prepare (there was a half hour break in the middle while it cooked) and it was ready and served within the hour. It felt like we were having a real meal….. it certainly didn’t feel like any kind of diet I had been on before. The yoghurt made the sauce taste rich and creamy so there was a definite level of luxury about it all.

    There you go. A way forward out of the diet doldrums. I made that after a long day and it certainly wasn’t difficult but it certainly was delicious.

    400 and Under is the way forward!
