Wild garlic buds

You know how some days you just long for something different to eat? Perhaps the weather is getting you down or the work you are doing seems rather tedious and your mind starts to wander….. you feel hungry (oh, how often I feel hungry. Goes with the territory of being a greedy old thing, I suppose) anyway, you feel hungry and you start to think of nice things to cook. A treat seems to be called for. Something to brighten up your evening…..

And then I thought of my wild garlic.

I’d cut away at the leaves the other week but I still had plenty of buds and as my mind was still unoccupied by pressing problems I started to think of how I could use the buds.

I’ve had them in a light tempura-style batter (but I didn’t want the fuss)

And in risotto (but I didn’t want to eat rice)

And I started to think about the shape of the buds….

Perhaps if I cosseted them in some butter, like tiny tender stems of asparagus…..

I could serve them with some lovely roast lamb. I had a lamb henry in the freezer…that would be quick. Forty-five minutes in a hot oven would get me a deliciously cooked piece of lamb and a few seconds in a pan and I could have the wild garlic ready.

Sometimes it’s worth letting your mind wander.

Besides the weather was awful

The rain was lashing down and if ever a day called for something tasty to cheer me, this was it.

Out in the rain I went and snipped away to get a good handful of slender stemmed garlic buds. I  got a few leaves as well as they would be lovely sauteed with a drop of cream as a base to balance the buds on. It doesn’t have to be like that of course… it’s just I had an abundance of sweetly mild leaves and some cream.

And I’m greedy. Have I mentioned that before?

So, a good handful of leaves

And some juicy buds … all I needed now was a knife, some butter and a pan or two.

Roughly chop the leaves while a knob of butter starts to sizzle in a pan

Then pop in the shredded leaves with a pinch of salt and let them saute gently.

A lovely dollop of thick Jersey cream makes a deliciously smooth and savoury sauce for the sofetened leaves.

Pop those tender buds and stems into more hot butter and quickly (very quickly) let them cook through.

And that was it.

My lamb was ready and all I did was serve those soft and buttery wilted garlic buds and stems over the lamb alongside a smooth and rich spoonful of creamy, shredded wild garlic leaves.

Remarkably delicious, though I say it myself.

Puys, peas please me

As the Spring advances, I seem to be getting more lively, almost as if I am speeding up.

I walk faster and I feel brighter and more alert. Must be the increased sunshine, I reckon.

The same goes for my cooking. I am moving away from slow cooked food and wanting faster results. I want to get in from work and make something quickly. Something brighter tasting and lively.

And who would have thought that lentils would fit the bill?

Not red lentils – these are lovely nutty, green and brown speckled  Puy lentils.

They cook really quickly, too.

Before you dismiss lentils as dark and stodgy, try them. They are packed full of protein and deliciously tasty and  make a perfect accompaniment for fish or meat. Sometimes potatoes just seem so… potatoey. Sometimes you want a change and lovely Puy lentils give you that.

They take the same time to cook as does roasting a piece of salmon in the oven… how about that as an easy supper option?

All you have to do is pour some Puy lentils into a pan, add some water and a stock cube (for added flavour) and start to boil gently.

The stock absorbs within a few minutes  – just try them and see if they are at the state of tenderness that you would prefer. They aren’t going to go mushy like red lentils, they keep their shape so don’t guage by looking, taste them. Maybe ten minutes or so should do it.

Then, just as you are ready to serve, add a handful or so of frozen peas.

Stir them round so they defrost.

And the surprise secret ingredient that changes this to a really lovely side dish that you will want to make again and again?

A spoonful of mint jelly. Stirred in, once everything is cooked, it  adds a lovely sweet brightness to the finished dish and really lifts it.

Don’t be put off by this – it doesn’t give it an over powering taste of mint, more of an elusive sweet sharpness that works wonderfully with fish and meat.

In actual fact, I am happy to eat this all by itself it’s so tasty.

Go on… you really should make them.

Broccoli and Stilton Pastryless Pie

At long last the days are becoming brighter and the weather seems to be improving. Today at work I had the windows open as it was getting rather hot, sitting behind glass with the sun shining in. It’s time, I think, to start freshening up food…. making it lighter and more summery.

Time, in fact, to make something like a pastryless pie.

I often make this because it is perfect with a light, dressed green salad for supper and also because it is absolutely ideal to take to work for an easy packed lunch.

A pastryless pie is, in effect, a quiche without pastry. The quiche filling is baked inside strips of ham. What that means is that if you are baking it to share with friends then anyone with a wheat intolerance or coeliac disease doesn’t have to miss out.

If you are trying to cut carbs from your diet, well, it isn’t exactly Atkins because there’s plenty of vegetables in there but it does, at least, avoid pastry.

So then… what do you need?

I had some broccoli in the fridge and that, along with a lovely piece of Stilton cheese would make a lovely pie.

I had half a dozen free range eggs, a small pot of cream, a packet of sliced Serrano ham, 200g of Emmental cheese (which I love for its sweet nuttiness) a courgette, a handful of cherry tomatoes and few baby salad potatoes.

For those of you who don’t have access to Stilton or Serrano ham or, in fact, anything else I have listed, just remember I am putting those ingredients in because that’s what’s in my fridge.

As long as you have eggs, cream, some ham (some kind of air dried ham, sliced thinly) some cheese and some vegetables you can make this.

Now, because you are making what is really a quiche filling, it is going to be runny. And you don’t have a pastry shell to pour it into. I told you we were wrapping some air dried ham around it but that isn’t going to stop the filling from running out, so this is what to do

You can buy silicone paper cake liners from most places now – one of these popped inside a springform cake tin makes the ideal liner to keep all your lovely ingredients from seeping out when you bake it.

Open your packet of ham and drape the slices round the edge.

You don’t need to completely cover the sides and you don’t need to cover the base. What you are doing is making what will turn out to be a lovely, savoury, lightly crisped ham edging. It helps keep it in one piece when you cut it.

The bottom of the pie will be lined with a layer of steamed and sliced potatoes – it makes for a firmer base. Either slice them and steam them now, or use left  over cold salad potatoes. Because I am using broccoli, I steam that at the same time.

See? Just a thin layer of little slices of potato.

Followed by a lovely layer of broccoli florets

I found a courgette in the fridge and if you use a julienne cutter, you get a glorious tangle of shredded courgette. When this cooks it disappears into the gorgeousness of the creamy, cheesey, eggy filling so even for avowed courgette haters… this would slip right on past them. Another vegetable chalked up!

And as it is a broccoli and Stilton pie, now is the time to slice that piece of Stilton you saw earlier.  You could crumble it if you want to, and scatter it across but I thought how pretty and symmetrical it looked to arrange it in thin slivers.

I had half of a red onion left over from something else I’d made so I thought that, sliced finely so that it would cook through while the pie was baking, it would add an extra hint of savouriness.

 That was scattered on top of the cheese.

That’s the vegetables taken care of, the next thing is the delicious cheesey, eggy mix.

6 beautifully golden fresh free range eggs need breaking into a bowl and whisking round with a fork.

A small (150 ml) pot of cream gets poured in and whisked around again.

And pour it in……

Give the springform tin a gentle shake from side to side to make sure the eggy mix falls down around those lovely vegetable layers.

I had some sliced Emmental to use up as well, so that was shredded and scattered over the top.

Little cherry tomatoes (there were only 4 or 5 left) were quartered and added to the top layer before the ends of the ham were folded over.

You can see when you do this that the egg and cream mixture seeps between the slices of ham and then you realise just what an excellent idea it was to use the paper liners…

Into the oven with it at 160 or so degrees C for approximately 30 -40 minutes.

You can tell when it is done when the top looks golden and if you give it a gentle side to side shake the pie quivers just a little bit… and if you press it with your finger it feels soft but firm…

The only thing to do now is to free it from the springform tin, peel back the paper liner and slide it onto a serving plate

The hardest part is waiting for it to cool slightly so you can slice into it….

With a green salad it truly is the perfect lunch or supper.

Tasty, easy to make, easy to take for lunch… cunningly packed full of vegetables in the midst of that delicious filling… just the thing for the summer months!

Pheasant in cider

When I made the strange, but rather delicious, Tomatoey, from an old cookbook, it suggested serving it with roast meat.

I always have, in my freezer, some game. Usually despatched by my brother and given to me so I have something ready to roast quickly. On the morning of the day that I was going to make Tomatoey, I rummaged through the freezer and came up with a lovely little pheasant, which I could imagine would be truly delicious served with a rich and gorgeous tomato bread side dish.

Wild game is healthy and generally very low fat – there’s no idling around in a farm, eating processed feed pellets for a wild bird. They eat what is natural and they fly so there is no excess fat on them. That’s good for a full flavoured and low fat meat but it does mean you have to cook them carefully – and by that I mean a quick roast or braise so they don’t dry out… maybe covering their tender little breasts with bacon to protect them and serving them with something that enhances their rich meat.

Roasting a pheasant takes less than half an hour, if you sear the outsides,  so that would go well with the timings I was working on for Tomatoey. Things were coming together.

First of all, get your casserole dish hot and add a teaspoonful of oil or so then sear the outsides of the pheasant, turning it round so all of the bird browns.

If you are not using cast iron, then sear the bird in a frying pan… a ceramic casserole dish will break if you put it over a hot hob!

Take the bird out and start on the next step

First, some some lovely onion needs to be chopped and popped into the casserole dish to start cooking

Some dry cure bacon can be chopped into that to make a rich and delicious sauce – but save a couple of bits to cover the breast of the bird when it is in the oven…

And a small bottle of cider will make a lovely gravy… so add some now to help the onion and bacon start to cook.

You will see it makes a lovely golden gravy as everything bubbles away.

Pop the bronzed little pheasant on top of the onion and bacon and cider mix and pour in the rest of the cider.

The remaining bacon can be laid over the top of the bird and all you have to do now is pop it into the oven for half an hour – which was handy because that was where I had the Tomatoey!

You end up with a gloriously tender and fragrant little pheasant… just falling apart..

And the gravy that has been made is both sweet and savoury

Perfect to moisten the little pheasant and extremely delicious to go along with anything else you choose to serve with it.

It is a rather special dish considering it took less than an hour to start, prepare, cook and serve. And half an hour of that it was looking after itself in the oven.

Give it a go, eh?

An Accidental Soup…..Chickpea and Chorizo

It’s so unfair… this is the lovely, long  Easter weekend and we were planning to go North for a family get-together and I have a rotten cold. I can’t think straight, my tonsils are swollen, my chest is rattling and I feel like death warmed up. We can’t go home and inflict this on everyone so we are staying put.

I haven’t got much in to cook with because we were going to be away and, besides, I don’t really want to cook anything long and involved. I want quick and easy.  The weather is awful and we need to be warmed through.

When I go to the larder to see what there is, I have soup in mind. That would be easy to swallow and it would be good for me. Soup is always good for you when you have a cold or are under the weather… the steaming goodness opens everything up and makes you feel like you are in the land of the living again.

I find some tinned chickpeas on the shelf and in the fridge, I know there’s some chorizo. I can make soup with that, I think…..

I can picture it in my mind.. almost taste it…. hot and soothing, creamy smooth chickpeas with lovely chorizo slices to spike it up a bit….

So, I chop the onion and start to cook it

Next, I open the can and rinse the chickpeas…. that’s essential as I hate that gloopy stuff that collects round them in the tin. I know it is just the chickpea starch but it needs rinsing off. That and the briney stuff the chickpeas are in. If there’s flavour to be added, it will be me doing it, not the tin.

So, stir the chickpeas round to get them coated in the oniony juices and bits of onion (this is going to be the quickest soup ever as the chickpeas are cooked – all you have to cook, really, is the onion)

I want some smokey heat  in the soup, so a good heaped teaspoon of sweet smoked paprika will give a certain depth to it.

Stir it in and watch the colour change to a cheering golden glow

Add a pint or so of water and some stock granules

And then… well, this is when cooking while marginally delerious takes you down an unexpected culinary road……

I was thinking, in my slightly befuddled way, that chickpeas were lovely but if I added , say, ground almonds it would give a lovely rich dimension….thickening things. and adding flavour.

So I reached for one of my storage jars (which the eagle eyed amongst you may recognise as coffee jars… waste not want not, I say, and they are excellent to put dried goods in. Thing is, I never label them because I can see what’s in them. I wash them and peel the label off and then use them again. It keeps my larder looking neat and as all the jars are the same size they can be stacked on top of one another. Good thinking, eh?)

See? Looks like ground almonds.

Except it was fine polenta! I realised after I had poured some in that I had used the last of the ground almonds a couple of weeks ago….

Well, there was nothing for it but to carry on. I added some more water and stirred it round to cook it.

A good old whizz with the blender turned it all into a golden, silky soup. I tasted it to see if the seasoning needed any adjustment. I had to get the Bear to check as I couldn’t really be trusted because of my cold. A pinch of Maldon salt and it was judged to be pretty good.

and adding to the soup – a few minutes to cook through was all they needed… and that was it.

From start to finish (including the three or four minutes where I stared at the polenta jar in puzzlement) that took about twenty minutes.

All I had to do was swirl some chilli oil over the top and add an extra few wafer thin slices of chorizo and there it was.

The prettiest bowl of soup. Golden yellow and glowing. Tasting absolutely delicious!

Sometimes you discover things by accident and you are really glad you did.

That soup was rich and tasty and my poor, sore throat felt soothed by it. I felt happier than I did when I started to make it.. .. and all that golden goodness filled me and relaxed me so I went back to bed and snoozed through the afternoon.

 And, do you know what? I will make it again and the next time I will deliberately add polenta.

Kidneys and rice… offally good!

You might have noticed, if you have read anything here before, that I am very fond of cooking the cheaper and often forgotten cuts of meat because they can, if treated well, turn into the most delicious meals. The same with offal.

When I was a schoolgirl I was forced to eat dry, rubbery liver and bouncingly hard kidneys and I swore that when I grew up I would NEVER be made to eat them again… until I cooked them myself and realised that offal wasn’t awful at all.

Now, one of my favourite quick suppers (only when the Bear is away….. he’s still rather stubborn when it comes to kidneys, but I have no doubt with training he’ll get there) is kidneys in a cream sauce on basmati rice.

Kidneys are so cheap – I think that pile of beauties cost me less than a £1 – and all you need otherwise is some basmati rice (a cup full) a few spring onions, some butter, cream and a dash of something alcoholic and either some flour to thicken the cream sauce, or, like I did tonight, some thickening granules. Now, I would normally avoid produced goods and shortcuts like this, but they really are rather good. They USED to say they were gluten free, which made them a great option if I was doing something for my brother…now I think they have to say that the product is made in a factory that also produces products containing gluten. Anyway… that’s why I started using them and I still use them today. The granules are just stirred in to whatever you are cooking and they thicken… It’s an option, isn’t it?

So, let’s start.

You need to remove the centre core and the tubules from the middle of the kidney. It’s easy enough to do – just slice them in half and then snip out the white core and tubes with scissors.

Chop the spring onions into pieces and add them to a pan with a spoonful of butter and a dash of oil (this stops the butter burning too quickly)

I used my favourite chilli infused oil just to give the dish a hint of a bite.

Cooking takes just a few minutes – you’ll be able to tell because the kidneys go from fresh. bright red to a rich brown.

In the meantime, I put a cup of basmati rice in a pan, add a cup and just under a half cup  of water, a pinch of salt and set it away to boil. Basmati only takes a few minutes to cook and doing it this way means there’s no need to drain it. If you cover it with a teatowel and put the lid on after the water has been absorbed, then the excess moisture is absorbed and you are left with fluffy, dry rice.

When the kidneys have just cooked, I like to add a dash of something alcoholic to perk up the final dish. If you are cooking this for children then you don’t have to add it… though I have to say, any alcohol will be cooked off, so it shouldn’t affect them.  Tonight, I am using port.

Why port? Well, there’s a bottle open and also I think the sweetness will combine well with the musky tang of the kidneys. Sometimes I use brandy, or whisky. I’m tired tonight and i think I might fancy a touch of sweetness in there, so port it is.

Then, a sprinkle of thickening granules, stirred in

And, because I have some in the fridge and it needs finishing off, I add a spoonful or so of cream

And that’s it.

Just stir the cream round, taste for seasoning – maybe a pinch of salt or a grating of pepper and then pour it over your lovely, fluffy rice.

Supper in less than 20 minutes.

Comforting, rich and smooth. Gently cooked kidneys (no rubbery, bitter bounce here!) in a delicious, creamy sauce on fluffy rice.  Just what you need to brighten a lonely evening.

Superfood salad

Right then. Celebrations  are over and spring is on the way. 

I have a new job and a new bounce to my step. Everything is looking bright and cheerful and I am filled with optimism. Not only about having a real job but I am optimistic about starting a diet. Well, when I say starting… I seem to remember saying I was starting one some months ago but the horribly cold weather and gloom got in the way.

The brighter days and increasing warmth make me feel lively and less in need of solid, warming foods. Lovely though that Toffee Apple Crumble was, it seems my tastebuds are shouting out for brighter, fresher things too.

One of the things the Bear and I like to eat when we start to feel like this is Superfood Salad.  Lovely chopped salad with fresh, raw vegetables and quinoa with a lovely savoury, light dressing.

It makes a delicious meal by itself, or perhaps served  as a side salad alongside salmon or chicken. 

The basis for the salad is quinoa (and if the spelling confuses you, it is pronounced “keenwa” ) It was important to the Incans of South America (who called it the Mother of all Grains”) but nowadays, according to Wikipedia,

” In contemporary times, this crop has become highly appreciated for its nutritional value, as its protein content is very high (12%–18%), making it a healthy choice for vegetarians and vegans. Unlike wheat or rice (which are low in lysine), quinoa contains a balanced set of essential amino acids for humans, making it an unusually complete protein source.[4] It is a good source of dietary fiber and phosphorus and is high in magnesium and iron. Quinoa is gluten-free and considered easy to digest. Because of all these characteristics, quinoa is being considered a possible crop in NASA’s Controlled Ecological Life Support System for long-duration manned spaceflights.[4]

I don’t suppose you can say fairer than that, can you? And if you add a good selection of fresh, crisp and crunchy vegetables, well, you have Superfood salad.

So, first of all, get your quinoa.  About a half a cup full would make enough, when cooked, to make a decent sized salad for maybe four people. Or, if you are us, it makes enough for supper with two portions left to take to work for lunch the next day.

Give it a rinse and then put it in a pan to boil. It will take maybe ten minutes.

You will know when it is ready, because it goes from looking like little grains into grains with little sprouts appearing

I often put a sprinkle of stock powder into the water to give the quinoa a bit of a hint of taste… you could try that.

Next, start on the vegetables.

The Bear won’t eat anything “stringy” (he thinks celery will strangle him) so I peel the outside with the potato peeler to get the worst of the strings off.

Once the celery has been transformed from a Bear-strangling-vegetable into a crisp and juicy stick of fresh greenness, I chop it into cubes.

And do the same with baby courgettes

And after scooping out the wet, seedy middle of a cucumber, I chop that into bits, too.

Get carrots, baby corn, spring onions, red pepper and baby plum tomatoes and do exactly the same to them.

A ripe avocado makes a good addition as well.

Now it really is a case of just putting it together – I put a handful or so of sunflower and pumpkin seeds in a bowl, then having rinsed in cold water and drained the cooked quinoa

I add that to the bowl and stir it round

Then add the chopped vegetables, stirring them into the quinoa and seeds

A good handful of chopped nuts  gives the salad an extra crunchy dimension

I make a light dressing with some walnut oil, some balsamic vinegar and some lemon juice and pour that over the salad.

And that’s it!

Look at it, isn’t it pretty? Fresh and crispy and delicious?

By itself it is gorgeous but I want to add a little extra to make it the perfect spring meal….

I have a lovely crisp pear and some organic feta cheese that, if I cut up, will go perfectly.

All that needs is the juice of half a lemon pouring over it to stop the pear turning brown and you have a sharp, sweet and salty extra to add to the salad.

So…. all you have to do is get some quinoa, a selection of vegetables that you like and with the aid of a sharp knife you can make yourself a really tasty salad that will not only brighten up your day by the sheer colourful crunchiness of it but it will also do you the world of good.

Spring is here – let’s eat something light and bright and good for us!

Baked polenta pie

Remember the polenta? How I said I had an idea for it? Because I’d made a big pan full of it?

Well I also had some broccoli…. and this was Saturday. The Bear was still away and, therefore, unable to kick up a fuss about me making something with broccoli in again. You can just hear the sigh in his words…. “oh not again…”

I’m sure I read somewhere that if you eat something you dislike ten times then you will learn to like it. Perhaps he is just a very slow learner? I don’t know. I keep feeding him broccoli. It has to have been more than ten times now, surely?

Admittedly he has stopped clenching his mouth shut and turning his head away in disgust as I try and make him eat it, but he just WON’T give in gracefully. Still, he wasn’t there and I could do what I liked!

When I made the polenta, I poured the majority of it into in silicone paper cake liner, in a springform tin

(Whoever invented these deserves a medal… the hours they have saved people cutting and snipping at baking parchment

I needed it to set… which it did, overnight.

All I had to do was prepare some broccoli…

I only used the florets this time – the stalks can be used elsewhere  (I’m fancying Broccoli Slaw later this week) – and put them in to steam, with some chilli oil. A quick way of doing this is to rinse the broccoli, shake off most of the water and put it in a bowl. I drizzle it with chilli oil and then cover the bowl and put in in the microwave for a minute or so on high. This is just enough to soften it and give it a gentle chilli bite.

While that is going on, I slice the polenta “cake” in two with the bread knife

And then (actually, this bit was quite tricky, but I did manage) get the base back in the tin (I put extra tin foil in because I thought the etxra fillings might run out…..)

I laid the bright green semi cooked pieces of broccoli on the base

Just because you can… and because you know it is going to make this taste more delicious than anything else….. add a few bits of Tallegio cheese.

I had some roasted peppers in a jar, leftover from when I made pork and pepper goulash, so I layered them between the broccoli florets

And then added tomato – I thought some quartered little Pomodorinos (tiny little plum tomatoes) would lighten up what is , essentially, a large wodge of polenta and cheese.

Flip the top over and on to… it might crack or break but don’t worry… it will all come together in the heat of the oven

And bake it at 175 degrees for maybe half an hour

Just look at it!

Doesn’t that make you feel like smiling? That gorgeous colour? The smell of delicious melted cheese and vegetables?

Absolutely perfect with some green leaves.

Major plus points – it is gluten free, quick and easy to make, and doesn’t cost a lot at all.

In my eyes, though? Best of all? It’s got broccoli in it!

Breakfast egg and polenta and a new camera

When I made cheesy polenta  I made sure I had made enough for more delicious meals. My greediness makes sure I always make extra of everything. There’s something about leftovers that is so appealing….

I had plans for a small portion of it –  breakfast! I had a lot to do and I wanted a quick, really quick breakfast.

Apart from racing round the apartment to get everything looking lovely for the Bear’s return, I also wanted to play with my new camera, which arrived this week.

My lovely friend, L, suggested it for me and, on the grounds she has known me long enough to recognise just HOW inept I am at technical things and how much I need things to work properly and not torment me with wicked technical tricks, I bow to her superior wisdom and all round good taste.

She has had to put up with so much from me over the years, times  when I’d ring her wailing that the computer hated me and was deliberately ignoring me, me claiming that I was jinxed and that all computers and technical gadgets were only built to make my life a misery. There was one time she listened to me run over a particularly evil mobile phone…. I had been talking to her and was just enraged at what a rotten piece of equipment it was. It would cut out and refuse to do things, oh it was maddening. It wasn’t just me, mind you. These phones were notorious for being useless. Everyone who was unfortunate enough to have one hated them.

Because it was on a contract I had to keep it – unless it was broken beyond repair. I’d tried “dropping it” but it was always fine. It just carried on cutting in and out of conversations, driving me to distraction. That day it was particularly bad. In the end I pulled into a layby, jumped out of the car, put the phone under the wheel and drove back and forth over it. L was still on the other end…..I was certain this would kill the vile phone and then I could get another one…. but what happened? I got back out of the car, picked up the phone and heard L laughing.

Say what you like about that now-departed mobile phone manufacturer – the phones were rubbish, but by golly they were sturdy.

So, L knows I need something that will be kind to me and take pictures easily. She doesn’t want to have to go through the saga of me shrieking in temper as something goes wrong. She knows I need foolproof. It has to take close ups of food and it also has to take horizon shots. L said the Canon IXUS 200 would be the one for me and there are all sorts of options – even (and this is a real plus point) even an option for fireworks!  If you have read this blog in the past you will know that our wedding anniversary is on Bonfire Night and we like to toast each other with champagne as we watch the fireworks going off from the city below us. Try as I might I hadn’t been able to take pictures successfully.

So, I now have a super-duper camera that even I, with my fumble fingers and low tolerance level for fiddling about,  can operate with some degree of success – all I have to do is learn how to use it.

That’s why I am up so early. I need to get everything ready for the Bear, I need to have breakfast …. but first, I just had to try the sunset setting. OK, so it’s dawn but it’ll be all right, won’t it? Same sort of thing?

Now, I really must get on. I like a savoury brekkie, rather than a cold one and I didn’t have time to make breadbuns so I could have a fried egg sandwich. I always feel that a weekend breakfast should include eggs somewhere along the line. I like them boiled, scrambled, poached, baked and best of all, I like them fried. I love the way the yolk dribbles out when you cut into it, all deep gold and glistening.

So……

All I had to do was heat, quickly, in the microwave, a few decent sized spoonfuls of the lovely cheesy polenta…. maybe a minute, if that. While that’s spinning round, I got out the frying pan and fried an egg.

The fastest cooked breakfast imaginable!

All it needed was a grinding of black pepper over it and a cup of strong black coffee to wash it down and I was in breakfast heaven.

Simple? Check.

Tasty? Oh yes.. oh very, very yes. Check.

Fast? Two minutes, so a definite check.

Economical? Oh, very much of a check.

Try it. It was delicious.

Cheesy Polenta

At the end of a long and tiring week, when it gets to Friday night, I really don’t have the energy to go gallivanting around town. I must be getting old, I suppose, or maybe it is that I really like my home… my sofas, the peace and quiet, the comfort…

I want to come home, sit down and pour a glass of wine, safe in the knowledge my alarm is NOT going to go off at 5.50 am.

And of course, any glass of wine that I pour will be much better than some extraordinarily priced glass bought in a bar, so the pleasure of that  is heightened as I sit there, relaxing. Of course, it is better when the Bear is at home because then we can sit together and talk about the week… but it is pretty darn good when it is just me!

I don’t just sit and drink wine though, I need to eat, too. I need something nice and easy… I need something that will restore me after a full week’s work …. the best option?  Something savoury and delicious… it could, occasionally, be a takeaway from our local Chinese, but tonight I fancy something  carb laden and heavy on the cheese.

Cheesy polenta, in fact!

I’ve been thinking of perfecting more gluten-free dishes – my brother is badly affected (though not coeliac) and one of my dearest friends was diagnosed relatively late in life (in her thirties!) as coeliac. As I adore both of them there’s every chance that they will come and stay, so I need to be up to the mark should they arrive. The fact that A, my friend, recently moved to the USA, means she is less likely to turn up on the doorstep  but you never know.

So, tonight is not just about sheer self-indulgence – it is about making sure I can make something for my darling brother and my dear friend. The fact that sheer indulgence and a full tummy are the results… well, that is just a bonus!

First, look through the fridge for any cheese that you have – I have some parmesan that could do with being used, some cheddar that needs some surgery (just cut off the mouldy bits, that’s fine) and a lovely bit of Italian Tallegio (all soft and rich and creamy)

Get  your polenta out, and a large pan.

I always have polenta in the house because apart from using it in a polenta recipe (obviously) it is also brilliant for using to dust the outside of the fabulous No-Knead Bread 

When you make polenta to eat, you will need one measure of polenta and four measures of liquid.

I’m just using a mug here – that’s going to make one big, gorgeous portion of polenta for me tonight… some for breakfast (don’t grimace like that, it doesn’t suit you!)  and enough to make a huge polenta flan. All of that will be revealed in posts to come. If you just want to make enough cheesy polenta for, say, four people, you will only need half a mug. (And, therefore, 2 mugs of liquid.)

Pour it into a large pan (this will need a large pan) and then add 4 cups of liquid… I am using half milk, half water. You can use plain water… but I am going all out for luscious comfort tonight.

Stir it round so it mixes smoothly and start heating it.

Polenta is rather lovely to make… I  stand there, quite calmly, stirring. It is almost a meditative experience.

Do be careful though – it is so thick that when it gets up to the boil it has a nasty habit of spitting violently at you, if you aren’t stirring it.

Grate your odds and ends of cheese. I dare say an Italian person might have ideas about what sort of cheese, but I am being very economical and using up all the bits and bobs in the fridge. There’s that cheddar I told you about and some parmesan…. you are looking for a huge mound of cheesy goodness.

By now, the polenta will have thickened beautifully and be glugging away – when you lift the spoon and drag it, it will leave trails behind it.

Now add handfuls of cheese

Stir it in… all of it

.. and watch it melt into the polenta.. becoming part of the polenta….

And, as I believe I may as well be hung for a sheep as a lamb, I drop in a chunk of butter and watch that melt into swirls…

Remember I said I had some Tallegio? It’s a beautifully soft cheese with a rind

I don’t want to stir that in but I do want it in there… so what I do is cut a slice

and after putting some hot and steaming polenta into a bowl… lay the slice on top and then cover it with more polenta.

Imagine that – a beautiful, creamy, extra cheesy surprise, melting secretly in your bowl….

Now, polenta by itself is a delicious supper, but I happen to have some roast pork with crackling left over… so a slice of that on the top will be perfect. Those that don’t eat meat will still be ecstatic at a bowl of polenta

Well!

And that Tallegio? Look how it has melted perfectly.

All you have to do now is return to the sofa, bowl in hand, and tuck in.

Friday nights, eh? Who needs to be rocketing about town, spending lots of money when you can be at home eating polenta?
